And On That Farm, She Had Some Mint…
Michael Pollan's NYT article I mentioned last week did it's magic and got me cooking. Since reading it, I've made burritos with fresh corn (granted, hardly a culinary miracle), artichoke pasta, and cold cucumber soup.
Anyway, I know that we're a ways behind the standard gardening calendar here at Ideal Bite (and my request for a lemongrass starter plant at the nursery last weekend encountered a scoff), but the modest little collection of edibles in my urban garden is still yielding tasty things - my husband whipped up an omelet with fresh thyme (see photo, left), and this week, I'm going harvest some fresh mint leaves (I just planted spearmint - see photo, right - plus I've got bergamot mint flourishing on my sill), and in my never-ending quest for veg-centric protein, try them in a summery quinoa salad of some kind…I'm thinking tomatoes, cucumber, lemon, olive oil, sea salt…
In the meantime, if anyone has a great recipe that uses mint, thyme, or rosemary, please share!
