The Bite:
imageWanna pillage the riches of summer? X marks the spot: ultrasweet, superripe local strawberries from Seedling Fruit of South Haven, MI. Snatch up a pint or four of these gem-like berries that taste as juicy and ruby red as they look (we know – it’s hard to see through that eye patch), available at fave farmers markets. And try this Biterly recipe from farmer Peter Klein, who loves everything he grows (just ask). Ahoy.

Handheld Strawberry Shortcake “Bites”
Makes 25 Shortcakes

Ingredients (local or organic whenever possible):
25 ripe strawberries
1 cup whipped cream
5 graham crackers, crumbled
1/4 cup honey (optional)
1/4 cup chocolate syrup (optional)

Trim short end of berry so it stands. Scoop out fat part of berry to create a hollow, and fill with whipped cream. Sprinkle crumbled graham crackers over cream, then drizzle with honey or (um, and) chocolate.
