Craving ma's homemade meals, but wanna give it a healthy spin? Take a meat retreat with the Chopping Block's vegetarian cooking classes. Heating up right now: the ABC's of Fall Cooking demo with appetizing nibbles of Gruyère-stuffed acorn squash and a sweet-and-sour cabbage soup. Midweek, skip the Thai takeout and instead whip up (then eat up) tom yum soup and tofu coconut curry with basmati rice faster than you could call, drive, and pick it up (it was seriously easy). Classes are all low key (small), cheap, and target beginners, plus CB has workshops for kids, couples, and wine-snob wannabes. Bonus: veggie meals cook up little in the way of animal-induced CO2 emissions and water consumption. Mom would be proud.
