Local Restaurant

The In(ovasi) Crowd

06.03.2009

The Bite:
Wanna clique with a new restaurant? Here's your in: Inovasi, a North Shore resto whipping up modern American eats - from tender and truffle-y Great Lakes whitefish to creamy risotto with spring peas - using fresh picks from local farms like Gunthorp and Freedom Organix. Inovasi's digs are sophisticated (think pewter-colored fabrics and a limestone bar) and sustainable (recycled carpeting and green cleaning) too. Peer pressure: Don't miss its own version of Italian-style limoncello.
Why Care?:
Supporting nearby farmers keeps the local economy up and carbon emissions down, since your meal doesn't have to travel the average 1,500 miles to get to your plate.
We asked for the perfect pairing and got it - Row Eleven's biodynamic Pinot Noir was perf with our moist, roasted Freedom Organix Baby Chicken (pasture-raised specially for Inovasi, BTW, about 40 miles away from Chicago).
Wanna Try:
Inovasi, 28 E. Center Ave., Lake Bluff (847-295-1000). Freedom Organix Baby Chicken, $13; Row Eleven Vinas 3 Pinot Noir, $9/glass.

Cocktail Fact

A recent scientific study showed that chickens are the closest living relatives of the Tyrannosaurus rex.

Small Changes Add Up

If 10,000 Chicago Biters eat one serving of local chicken instead of poultry shipped from afar, we'll conserve almost four bathtubs full of diesel fuel.
