Modern American Restaurant

Prairie Home Companion

The Bite:
Want more of a variety show during your next dinner out? Go to where all the food's above average: the sleek, new Prairie Grass Café, now dishing up modern American eats just 30 minutes outside Chicago. Chef Sarah Stegner (two-time James Beard award winner - aka the Oscars of the food world) whips up dishes like Tallgrass Beef Penne Pasta and savory, cheesy Phyllo Strudel made with River Valley Mushrooms. Also try her Wild Alaskan Salmon - one of the most sustainable, healthiest-for-you fish, says Shedd (.pdf) - with crisp Three Sisters Garden Pea Shoot Tendril Salad. It's Keillor.
Why Care?:
Eating locally sourced produce averts farm-to-plate emissions, and choosing sustainable seafood means longer-lived fish populations - 70% of the world's fish are overfished.
We love that Chef Stegner filmed her visit to Olga Bay, AK, to see for herself that the salmon she sautés to moist and flaky perfection is sustainably caught.
Wanna Try:
Prairie Grass Café, 601 Skokie Blvd. (847-205-4433). Wild Alaskan Salmon with Pea Shoot Tendril Salad, $31/average market price.

Cocktail Fact

Salmon have a stronger sense of smell than dogs or bears.

Small Changes Add Up

If 10,000 Chicago Biters opt for a pound of local produce rather than stuff grown elsewhere, we'll save enough diesel fuel to fill two and a half kiddie pools.
