As far as we’re concerned, not much, so pay your respects to Cru Cacao, a new raw-organic-vegan chocolatier and catering biz that serves up events big and small. Instead of cream and sugar, its truffles are rich with cacao butter and coconut oil, and sweetened with blue agave nectar. On the savory side, we love Cru’s cauliflower-root vegetable samosa with pink pepper cream and mango-mint chutney, and the fab pear napoleon with exotic mushrooms and truffle oil. The chefs, a husband-wife duo, use only sustainably grown, fair-trade ingredients for their tasting menu dinners, and never cook over 118 degrees, significantly reducing gas and electrical consumption while also preserving food nutrients. And holy cacao: They’ll even clean up using eco-friendly, vegan cleaning products.
