Nice Melons

The Bite:
imageIf you like 'em firm, get a load of these: Rocky Ford cantaloupes, in season for a few more weeks. Grower Adam Smith sure knows his melons, insisting that they're best eaten naked (er, plain), and if they're local, 90 cents of every dollar you spend goes back to CO farmers. For a great pair-ing, top grilled fish or chicken with this new salsa recipe from Chef Ian Clark of Centro Latin Kitchen and Refreshment Palace - shared exclusively with us, and now you.  

 

Cantaloupe-Habanero Salsa
Makes 4-5 cups

Ingredients (local or organic whenever possible):
2 Rocky Ford cantaloupes, diced
1 jicama, diced
10 green onions, thinly sliced
1 bunch cilantro, chopped
3 habanero peppers, minced
1/2 cup lime juice
1/4 cup honey

Mix ingredients, and season with salt and pepper.
