Skinny Dipping

The Bite:
Like to eat naked? Huh. Well, no shirt, no shoes = no service at Vesta Dipping Grill, but your meat, seafood, or tofu'll come stripped down with minimal seasoning – ready to dunk in three of VDG's 35 sweet or savory dipping sauces. We'd swim suitless for the CO lamb tenderloin (dipped in Pistachio Mint); veg heads'll dig the Vegetarian Mixto - roasted wild mushrooms, grilled marinated vegetables, and mascarpone grits (Tamarind Chipotle sauce, perhaps?). VDG just snared an award from the CO Wine Industry for Best Use of CO Food and Wine (try the BookCliff Vineyards Viognier) – so it's keeping transport emissions low. Plus, it recycles fryer oil into biodiesel and uses water-efficient appliances. Go on, make a splash.
Wanna Try:
Vesta Dipping Grill, 1822 Blake St. Map It (303-296-1970). Grilled Lamb Tenderloin, $28; Vegetarian Mixto, $16.

Cocktail Fact

YMCAs prohibited swimwear in their pools until the 1960s – when they began admitting women.

Small Changes Add Up

If 10,000 Denver Biters eat just one pound of locally produced meat instead of the conventional stuff, we'll save enough diesel to fill two bathtubs.
