Whip It Up: Iced Tea

Mint to Be

The Bite:
Searching for the one drink to keep you cool? You're destined to love this mojitoesque iced tea recipe from LA's Tealandia. Just combine its organic and fair-trade Zen Garden tea with some mint and other ingredients from your garden or local farmers market, add a lil' agave and some ice, and voilà…your perfect hot-weather mate.
RoZen Iced Tea
Serves 6

Ingredients:
(local and organic whenever possible)

• 6 cups water
• 2 Tb Tealandia Zen Garden loose-leaf tea or 4 sachets (Tealandia's pyramid-shaped bags)
• 2 Tb agave nectar
• 2 pitchers of ice
• 3 limes (for juice and garnish)
• 1 bunch mint leaves
• 6 rosemary sprigs
• 1 orange, sliced

Directions:

Heat water to a gentle boil, then pour into a teapot with the tea leaves. Steep 2-3 minutes, remove the leaves, then cool the tea in the fridge. When cool, add agave.

Fill a half-gallon pitcher with ice, then add juice from one lime and wedges from the other. Toss in a handful of mint, half the rosemary, and some orange slices, and pour in the tea.

Serve on ice, with a few mint leaves and rosemary, and a lime and an orange slice on the rim.
