Wanna dine like an aristocrat? You don't have to be Prince William to enjoy Avalon Hotel's schmancy Blue on blue restaurant in Beverly Hills, which serves modern American fare with a green twist, poolside. In honor of Earth day, this week's menu is all about organic and farmers' market finds - teaser: arugula rustica with crispy mozzarella; roasted halibut with cranberry red potatoes, grapefruit and fennel; and lemon custard with vanilla meringue. Pair with flights of local and organic wines, or sip cocktails made with market-fresh fixin's and organic spirits. Between mid-century décor, the moonlight (er, candles), and drinks, no one will care if you're blue-blooded...or -collared.
