SM uses local ingredients from NY farms like Hawthorne Valley and Red Jacket Orchards and decorates 'em - dark chocolate with espresso buttercream, vanilla bean, or carrot - with snowflakes and metallic icing or colorful-sugary bird nests and flowers (see photo). She also tackles the Twinkie: Behold the Goldies - organic dark chocolate sponge cake filled with vanilla cream and topped with dark chocolate ganache and schmancy edible golden powder.
