The answer to making sure you enjoy yourself before ringing in '09 with a hangover (the way it's intended)? Sparkling vino, natch. Our bubbly picks this year include the apple-and-orangy Hermann J. Wiemer Blanc de Noir, grown in the Finger Lakes with only organic fertilizers and a wee 'mount of preservative sulfites (85% fewer than norm). Also: the newly bottled Wölffer Sparkling Brut, made from handpicked Chard' grapes in Sagaponack, NY, grown without insecticides or herbicides. You'll get all the fizz without the excess fuel - these local bottles travel 7,374 fewer miles than the French stuff...scoring a little extra eco-cred.
