Grass-fed Beef

Star Spangled Burger

06.29.2009

The Bite:
Oh say can you see…yourself throwing a BBQ next weekend? Grazin' Angus Acres proudly hails Black Angus burgers from cows that grub on grass at its sustainable farm in Columbia County, NY. GAA sells premade patties, as well as nitrate-and-preservative-free hot dogs made only with chuck, sirloin, and top-round cuts, so they taste kind of steak-y. And for the brave: hot-'n'-spicy, Cajun all-beef sausages.
Why Care?:
Grass-fed cattle produce up to 20% less methane (a greenhouse gas) and require a lot less water than factory farm, grain-fed cows (more is used for feed and to wash away waste) - and their poop actually fertilizes the pasture.
We like to pair our burger with Rick's Picks garlicky Slices of Life dill pickles and Katchkie Farm sweet-and-sorta-spicy ketchup.
Wanna Try:
Grazin' Angus Acres, available at the Union Square Greenmarket Fri.-Sat., University Pl. (212-788-7476). Black Angus Burgers, $17/6 patties. Hot Dogs, $14/8.

Cocktail Fact

The national anthem is actually set to the tune of an old English drinking song called "To Anacreon in Heaven."

Small Changes Add Up

If 10,000 NY Biters eat a serving of grass-fed beef instead of grain-fed this July 4, we'll save enough water to fill more than eight Olympic-size swimming pools.
