SMALL CHANGES ADD UP

If 10,000 NY Biters' kids eat an organic fruit snack instead of a conventionally grown one every day for a year, we'll avert the weight of more than 1,000 hefty biology textbooks in pesticides from entering the environment.

COCKTAIL FACT

No organic waste leaves the Chase property: They either compost it, or feed it to their chickens, dogs, parrot, or two horses.

Chasing Jayni

The Bite

image
If you see Jayni Chase, don't chase her, just give her an eco-high five. Founder of the 20-year-old Center for Environmental Education, Jayni is spreading the eco-word to schools around the country by providing info, resources, and materials to teachers to help kids learn about the environment. She's also making over the schools themselves, with ideas and resources for recycling, transportation, and food services. And when she's not chasing down funding, staff, and partners for the CEE, she and her fam (husband Chevy, and their three daughters) are keeping their NY home running green - eating mostly vegetarian, locally grown or organic food; composting; using solar power; and chasin' litterbugs outta town.

Wanna Try?

Jayni chases down her favorite locally sourced dishes at Flying Pig, 251 Lexington Ave., Mount Kisco, NY (914-666-7445).
