SMALL CHANGES ADD UP

If 10,000 NY Biters go vegan once a week instead of eating meat, we'll avert the weight of 563 Broadway actors in CO2 from spamming the environment.

The Bite

Missing out on Clay Aiken's Spamalot run? Head downtown to Broadway's newest debut instead: Broadway East. Opening tonight, this mostly veggie restaurant is turning local Hudson Valley and Long Island farm goods into exotic dishes like Portobello e Noce Nero, made with grilled millet polenta, and porcini mushroom ragout. You can also just hang at the bar: Sipping the Lychee Bellini (made with sparkling sake and organic lychee puree) is officially on the top of our to-do list. And sustainable describes more than the food: It's got biodegradable take-out containers, tabletops made of wood reclaimed from a NYC water tower, and a 240-ft "Green Wall" of plants. Dinner starts tonight, with breakfast, lunch, and brunch on the way. No spam here.

Wanna Try?

Broadway East, 171 East Broadway, b/t Jefferson and Rutgers Sts. (212-228-3100). Portobello e Noce Nero, $20.
