The Bite:

Getting ready to load up on vino for your next dinner party? Stay on target with biodynamic wines from Healdsburg's Quivira Winery, which bottles up bold, award-winning reds. A few generous tastes of its bright, fruity Sauvignon Blanc had us thinking about a search for wild salmon (we heard they were in the newly restored stream on Quivira's property) in hopes of finding a suitable accompaniment. (We refrained.) And while most grapes get smacked with 18 different chemicals over the course of a growth cycle, Quivira practices sustainable agriculture to promote biodiversity and reduce the need for chems. It also uses bottles made of recycled glass and fires up the entire operation with solar power (see photo). Bulls-eye.
