Jive-Talking Turkey

12.17.2007

The Bite:

Willie Bird Turkeys ain't no suckas. These free-range, purebred Heritage turkeys raised in the oak-studded hills of Sonoma County keep it real without the antibiotics and inbreeding that go into your average large-breasted butterball. Rich in flavor (think duck) and abundant in dark meat - our leftovers-sandwich sureshot - you can get Willie Birds pre-pimped in smoked or organic varieties. These healthy birds are worthy enough to grace the kitchen at the swanky Marc Hopkins Hotel in Nob Hill, and the Queen of England once sent out for its gobblers while she was in town. And that ain't no jive.

Wanna Try:

Willie Bird Turkeys, available at Good Life Grocery, 1524 20th St. b/t Connecticut and Missouri Sts. (415-282-9204). Free-range turkey, $2.49/lb.; free-range organic turkey, $3.29/lb.

Cocktail Fact

Calling the bald eagle "a bird of bad moral character," founding father Ben Franklin suggested the national bird be a turkey instead.

Small Changes Add Up

If 10,000 SF Biters opt for a 10-lb heritage bird instead of a mass-produced industrial fowl, we'll invest more than $500,000 dollars in natural farming.
