OK, so you can't extract the gluten from those cookies with a turkey baster. Here's a new plan: Wheat-free Biters can skip the DIY-ing for now and try Flying Apron Bakery for some tasty (f'reals) organic, gluten-free, wheat-free, and vegan sweets - cookies (like Macaroon Mountains - we didn't even miss the gluten), cakes (like Apricot Bliss), pies, and more. FAB also uses local ingredients like berries from Hayden Farms. Take home the goods in biodegradable cellophane packaging or compostable cardboard. Well-thought-out.
