Eco Wine List

Wine-Wine Situation

05.01.2009

The Bite:
Want some vino that benefits your palate and the planet? You can't go wrong with Tilth's new entirely eco-friendly (and entirely delish) by-the-glass wine list. The certified organic resto pours 17 - prepare yourself - organic, sustainable, biodynamic, LIVE certified (meets international standards for sustainable grape growing), or Salmon-Safe (vineyards that control runoff and use natural pest controls to protect salmon habitats) red, white, and rosé wines. No losers here.
Why Care?:
Opting for eco-wines means growers keep pesticides and herbicides off the earth and out of your glass, and skipping the added sulfites in regular varieties might lessen the headache portion of your hangover (many folks are sensitive to them).
Ironic, but try the light and refreshing Adelsheim (Salmon-Safe and sustainable from Wilamette Valley, OR) Pinot Noir Rosé with the Sockeye Salmon Tartare.
Wanna Try:
Tilth, 1411 N. 45th St. (206-633-0801). Adelsheim Pinot Noir Rosé, $12/glass.

Cocktail Fact

It takes about 600 grapes to make one bottle of wine.

Small Changes Add Up

If 10,000 Seattle Biters swill only organic wine instead of nonorganic, in a month we'll avert the weight of 38 sports trophies in pesticides.
