The Bite:
The key to preserving leftover wine is preventing exposure to oxygen, i.e. air. Keep the wine for several days by using a simple, inexpensive vacuum pump with a plastic "cork."
The Benefits: 
  • Reduces wine waste (save the wine!), thus creating fewer empty bottles to recycle.
  • You don't have to over-imbibe in the name of righteous preservation.
  • You'll impress others with your fancy new gadget.
Personally Speaking: 
Leftover wine just isn't something we normally have on hand. But on those rare occasions, we pump out the air and rejoice that our wine will be good the next day and beyond.
