The Bite:
Wake up and smell the sustainable roe. A lot of caviar's harvested unsustainably, but if you're hankerin' for some blinis and crème fraiche, switch to a more sustainable source of roe.
The Benefits: 
  • Delectable taste. Leading chefs say you can't tell the difference between conventional Caspian sturgeon and farmed alternatives.
  • Save endangered fish. The popular beluga sturgeon declined in population by 45% between 2004 and 2005.
  • Fewer poachers. The illegal caviar trade is 3-5 times larger than the legal one.
Personally Speaking: 
We won't be featured on Robin Leach's Lifestyles of the Rich and Famous anytime soon, but when we're feelin' fancy, farmed sturgeon is a great excuse to break out the champagne.

  • Sterling Classic Caviar - farmed California sturgeon caviar. While farming isn't great ecologically, it's definitely the better option since wild sturgeon is so overfished ($57/1 oz).
