The Benefits:
- Delectable taste. Leading chefs say you can't tell the difference between conventional Caspian sturgeon and farmed alternatives.
- Save endangered fish. The popular beluga sturgeon declined in population by 45% between 2004 and 2005.
- Fewer poachers. The illegal caviar trade is 3-5 times larger than the legal one.
Personally Speaking:
We won't be featured on Robin Leach's Lifestyles of the Rich and Famous anytime soon, but when we're feelin' fancy, farmed sturgeon is a great excuse to break out the champagne.

- Sterling Classic Caviar - farmed California sturgeon caviar. While farming isn't great ecologically, it's definitely the better option since wild sturgeon is so overfished ($57/1 oz).
- Just Caviar North American Caviar - sweet, smooth variety from farmed paddlefish ($49/2 oz).
- Vital Choice Salmon Caviar - eco-friendlier wild salmon caviar tastes bold and tangy ($20/6 oz).
