Does the sight of the Canadian flag make you smell pancakes?

The Bite:
You've got maple syrup on the brain. Like us, you have mad love for the maple leaf and its tree's sticky sweet sap. Maple syrup (the real deal, not dressed-up corn syrup) is best when organic, so douse some waffles in it for a breakfast that's better for you and the maple forests.
The Benefits:
  • Sweet news for calorie-counters, eh? While it's got more calories than some of our fave alternative sweeteners, 1 tbsp of maple syrup has just 40 cals, versus 50 for sugar and 64 for honey.
  • Happy trees. Organic standards limit the number of taps per tree and ensure that trees remain pesticide-free while growing.
Personally Speaking:
When Sara was five, she went on a field trip to a sugarhouse (aka maple syrup farm). When she got home, she raided her dad's toolbox, grabbed a hammer, and did some major damage to a (non-maple) tree in her yard in hopes of replicating the experience.

Cocktail Fact

It takes 40 gal of maple sap to make 1 gal of syrup.

Bang For The Bite

Taking shots of maple syrup (as we did during taste-testing) is almost as fun as taking shots of beer, and Aunt Jem's got nothin' on these options - but they probably won't save the world.
