What's a way to get lil' Biters to snarf down a healthier diet?

The Bite

Spending time with 'em in the kitchen. But before you splurge on the mini-chef's hat, pick up an eco, veggie kids' cookbook to help get them slicing and dicing their way to becoming the next Alice Waters.

The Benefits

  • Stirring up kids' eco-interests. Check out books that really speak to kids about how food is grown and the importance of organic agriculture.
  • One-part hands-on activity. For kids, preparing and devouring their own meal can be fun.
  • A recipe for saving resources. Going veggie even just occasionally helps conserve major resources. A pound of grain uses less than 1% of the water needed to produce a pound of beef.

I Would Almost Rather Starve

Sugar-free. (Gasp.) Carob. (Shudder.) Gluten-free. (Gulp.) The "goody drawer" at my house growing up was bo-ring. Sweet relief came when, and only when, the Snavely family busted out the unbleached flour and got to baking. Somehow, Mama Snave didn't think it so bad to bring out the BROWN SUGAR! and the REAL BUTTER! when it came time for hot, freshly baked, doughy food stuffs (she's Swedish, so...).

That said, this is my opportunity to give a shout out to the woman responsible for most of my childhood opportunities for edible indulgence: Thanks Mama, but really, thank you Molly Katzen - I will play in your Enchanted Broccoli Forest anytime.

As a dentist I also advise my patients to use their toothbrush dry. I also advise patients to only use a pea size amount of toothpaste and only spit out after brushing, not rinse. This keeps the fluoride in contact with the teeth for longer helping to prevent tooth decay.
Cooking with kids absolutely enlarges their food vocabulary and inspires them to try new things, but adding harvesting the ingredients and, I imagine, shopping with them makes it more so. Our grandkids come up for a visit (not often enough) for a week at a time and their favorite things include getting the eggs digging potatoes, carrots or picking berries or gathering any food from the garden. They then happily help cook, and then eat, pretty much anything we make. I cannot think of anything they haven't consumed, and we're talking things like cabbage, broccoli, swiss chard, beets, copius salads, rhubarb and other off-the-kid-spectrum foods. One of the local elementary schools here has a small school garden that the kids participate and cook from (as well as ingredients for school lunches) and it has the same effect. The process and discovery and getting to choose the ingredients in the store inspires more adventurous eating. I had to discover all this out after i left home, the diet at our household was beyond boring. My Dad had a heart condition and his rigid diet defined the menu. I don't think they ever heard of vegetables - I never ate butter, fried food or things like squash, avocados or artichokes until I left home. Kids love life.

I highly recommend the cook book by Jessica Seinfeld called Deceptively Delicious. It is a nutritious way to add those much needed vegetables to meals without even tasting them. I would also suggest borrowing from your local library before buying it, if you want to try it first.
